Version 40d14 is completely identical to 40d gameplay-wise - the only things "new" about it are some interface optimizations. Go check DFMA if you want some videos to watch.

notin the new version, u can actually see the little dwarf bodies and doors and stuff it,graphics wise, looks alot better

By "interface optimizations", he means decreasing memory usage for interface-related tasks.

The ASCII graphics are part of what make DF awesome. If you lack the imagination to turn a U next to a smiley face surrounded by red commas into an epic swordfight between a human and a dwarf, then this may not be the game for you.

Sounds like you're using a graphics pack. That has little to do with the actual version of Dwarf Fortress you're using. As for videos using said graphics pack (or any graphics pack) you'll just have to watch various ones. I don't think there is anything that specifically sorts them out based on that.
