I'd be content with just the following:
(1) Wooden blocks become "planks", logs can be cut into maybe four of them. Planks could be used for building constructions, but you'd still need raw logs for axles and maybe at least one log for waterwheels and windmills.
(2) Any wooden item could be burned for charcoal, if designated for burning -  similar to designating metal items for melting, in fact it could be the exact same thing, just renamed "melt/burn". Logs would give 4 charcoal when burned, if logs provide 4 planks, otherwise they'd stay the same.

The main reason I feel this wouldn't be enough is that we'll now have multi-tile trees of vastly different size, shape and thickness to cut down and process, and to just simplify all that into some standardized log feels really weird. A larger and many tiles thicker tree would obviously give much thicker logs than a small tree, rendering the old use of the word log moot. All this could of course be solved rather easily by just using a different name for it, such as timber or simply wood, and have logs give different amount of useable timber/wood depending on their thickness and length. (I'm not a native english speaker so if there are better words to use for this please chime in ^^)

A lot of the tree would also be too thin and weak to use for any carpentry, but still work just fine for burning (branches, roots etc).

So, wood could be something like:
--Thick logs (great for blocks and carpentry, mostly comes from trunks)
--Logs (can be used for carpentry, comes from more slender trunks and thicker branches)
--Branches (can be used for woodcrafting, comes from branches)
--Twigs (can be used for ash and kitchen-fires and such, comes from twigs)
--Leaves (can be improvised into cloth or burnt to ash, obvious)

The most important and easy use for leaves would be animal fodder though. It's not done much nowadays anymore, but leaves used to be a highly valued source of winter fodder as well as fresh food during the dry parts of summer.

Him, I hadn't thought of that. Most domestic herbivores are grazers, but grass is tougher to digest than leaves so they'd probably survive on the latter. Heck, they'd be fine with meat if they needed to.

You could just have the thicker trunks give multiple logs. That would make managing different amounts of wood easier, but still allow for differences in yield.

Maybe something like how mining works?

In mining the yield is artificially low for gameplay reasons. The yield of wood should lean the other way -- be artifically high. The reason is that the fortress map size is often smaller than the region a settlement would get wood from and larger maps use prohibitively more system resources.

One log per tile sound good?
And I meant generally.

Well, that tile could either contain a 2 meter thick piece of trunk, or a single tile tree just barely large enough to be worth cutting down. Both giving the same amount of wood would make no sense :>

One log per trunk tile or big branch tile, and units of firewood for smaller branches?

I will only support beams if creative methods of weaponization are found, giving dwarves the reality of beam weaponry.
