Specifically, a magma-safe grate hooked up with a non-magma-safe mechanism, so I can open it if some moron gets himself wedged in there.
If I don't open the grate with magma around, will the magma flowing through it cause it to deconstruct?

The mechanism will melt, and I'm not sure about the grate. Back up your save and check it.

I haven't tested it my self, but I'm betting it won't melt/deconstruct. Most things right now don't react to magma, except for items. Constructions are safe from magma, so don't think a constructed grate/bars will be affected.

This is not quite true. Anything constructed with b, C is safe from magma and, indeed, ANYTHING in dwarf fortress short of a cave-in.

Other constructions, such as grates and floodgates and coffins, are safe so long as magma doesn't enter their square. If magma flows through their tile, and they are not made of a magma-safe material, they will melt.

 Doors can be made of non magma-safe materials too, I expect it's to do with the magma flowing through the tile, rather than the flowing up against it.

 What's important is the mechanism, if that is not magma-safe then it can melt when it hits a high temperature (caused by magma being close to it) and that will cause the item its attached to to deconstruct, and become just a spare floodgate or whatever. The magma will then flow over it.

 There is no real point in linking a grate to a lever. Clearly, by the fact that you are installing a grate, your dwarfs will never go beyond that grate again so you should just install the grate last and use a suspended wall construction on the side you dont want them to stand on.

Nothing will get magma damage unless the magma flows over it (except maybe wood; I know wooden pumps will take some damage from pumping it, so those are definitely an exception).  Constructions (anything designated with b, C) are always magma proof.  Grates are buildings not constructions.  Also, non-magmaproof mechanisms will melt and therefore cause the deconstruction of the grate if magma flows through the grate.  So the mechanism must also be magma proof, otherwise it is a one shot deal (assuming the building does not allow liquids to flow through - otherwise it's a zero shot deal).

Actually, it being a grate, it wouldn't even be a one shot deal, since grates let liquids go through. The moment some magma goes through the grate, the mechanism should go up in flames and the grate should deconstruct.

If you're trying to keep out the imps, try fortifications. Magma proof and they let fluids through.

Sigh, I have skimps, I have to build magma-proof cage traps now. Undead imps have been known to slip through fortifications.
