What makes grass go dry?

Also: What effects does it have and what is to be done to prevent it?

I believe heat is what primarily causes dry grass.  Which is why in the winter months you will sometimes see it turn green again.

For effects there is none that I know of.  Might burn faster, but that's speculation instead of tested fact.

Putting a roof over it seems to eventually turn the grass green again and keep it that way, but you would have to recreate Midgar if you wanted the entire outside green perpetually.

The weather models are actually moderately sophisticated (regardless of whether or not they're an accurate modeling, they give the impression of being complex enough to be so.)

The outside temperature and rainfall both vary with and within the seasons and over time.  I'd bet all these are factored into the drying of grass, as they are already factored into the growth of more significant plantlife (shrubs and trees.)

I see. Will bushes and saplings still spawn on these grass tiles? At the same rates or rarer? Stepping on it too often reverts it to soil too?

I don't know.  I don't know...

... And yes.  Dry grass gets trampled just like green grass does.  I haven't specifically kept an eye out for new growths on previously dry tiles.  My hypothesis, however, is that trees and shrubs will spawn on dry grass just as unhindered as they would elsewhere, though it may take longer.  But since it's gotten no testing, it's just a hypothesis.

Just a little question, what would be the best way to go about building a huge roof over the grassy areas so they can be green again? And, do bridges count?
 I have a fort on a hot embark that only has green grass when it's the dry season(Winter, cold) and it rains(Very rare in the dry season) This only happened once in the 10+ years I played, but it was very nice.
I asked about the bridges because that way I can have my dwarves control the entire outdoor temperature with just a single switch, which is an improvement over just having a roof so it gets green again.

Rainfall does effect whether or not the grass becomes green again on it's own.

(Full frontal ones, apparently.  With very short beards.)

Sure, it's a lot of bridges, but the question is, does it work? I'm not sure if a bridge makes the tiles under it 'inside' which has a good temperature.

Whatever the case, I'm already making iron blocks, because I like blocks better then bars. (And I'm not building anything important with just stone)

Edit: areas under bridges count as inside, I got that far with testing, but I'm not sure if it becomes outside again once the bridge is open.

Yeah, a bridge makes areas underneath it "inside." But I'm not sure if it will be outside again when the bridge is retracted.

Also, bridges don't provide support to other structures, but it will still let you build on the end of them without any other support. So placing a bridge at the end of another bridge can be done, but the instant its completed it'll cave in, likely killing the bridge builder.

I took advantage of an old fort I got that had a lever controlled moat, and I have to say that, at least with retractable bridges, it still counts as inside when the bridge is retracted.

Well that's too bad then, I guess just a large glass floor over the highest z level would be the best I can get for it.

Or seeing as there's no sand, I'll make a large iron magma reservoir there, when those elves come complaining about the trees, I'll burn the place.

No, you can build a bridge on the end of another bridge just fine.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.
