I find the easiest way to ensure a particular dwarf ends up in a particular coffin is to dig up the SOBs.  Basically, I place a bunch of coffins for general use; Urist McDeadun gets buried, alongside everyone else who "accidently" drowned in an engineering mishap.  If I wanted Urist McDeadun to be in a different coffin, I merely mark the rest of the coffins as unusable for burial and build or enable a coffin for burial where I want Urist McDeadun.

My loyal dwarves then deconstruct the original coffin, with no qualms about digging up the restless dead and throwing them in another crypt.

Graverobbing?  Is there any use it doesn't have?
