If the trolls are like insects as is commonly speculated, they might have exoskeletons and an open vascular system (although they're a bit large for that to be successful, but I'm bringing realism into this again).  This would result in them basically being a crunchy shell surrounding a bag of nothing but blood and the occasional organ.  Their skin doesn't really look carapace-y, so it could be unmodified chitin (which is more leathery and skin-like than the modified chitin that forms beetle shells and similar), but that wouldn't be sturdy enough to form a good exoskeleton.  Perhaps there's a layer of unmodified chitin over the exoskeleton.

I already told you guys, spongy tissue.  A reservoir of blood in their torso that's pumped into limbs to control turgor pressure and move them.  That's why blood sprays everywhere when they get injured.

Anyway, there's no reason to assume Kanaya's spine/dorsal nerve cord/blood-reservoir was severed by the science-beam.  It wasn't very coherent and it totally could have swerved inside her.

She probably has some form of regeneration from her Rainbow-drinker powers that is fast enough to repair her spine, but is too slow to have healed her entire wound.
