If you are looking to plan your fortresses out ahead of time may I suggest looking at Quickfort? Can plan the whole thing out using spreadsheets then have it auto build, dig, and designate.

Hmm, this looks like it could be just what i'm after.
Is it clever enough to take into account the terminal idiocy of dwarves when channeling or building walls in corners though? (I don't suppose it is- nothing can really account for their lunacy - but it would still save shedloads of time)

I do like Zorintrhox's pattern, except minus the outer hallways, and with two doors in each side. It's completely modular, and I can to explorative digging easily without messing up future expansion by digging where the doors will be.
