I went from 7 million to 6.96 in the course of a few months. What gives?

Maybe trading away some of your goods did that? Not hard to trade away about 4-5 thousand in one go.

Total wealth can also go down if you un-build items or if dwarves stop wearing them. For example, a weapon trap counts both as weapon wealth and displayed wealth.

I'm pretty sure eating and drinking removes the worth of the food/drink from the fort. Could that be the culprit?

If anything my food and drink stockpiles have been increasing. I'm not sure if wealth affects the size or frequency of sieges so I don't want to risk it. I want more.

So much of the game has a randomizing factor in it - sometimes it's hard to know for sure, but common wisdom is that it does affect the sieges.  "How?", exactly, can't say.

Afaik forbidding items takes them out of the wealth counter.

"As far as you know"?

This is trivially easy to test - and if you had, you'd have known this is not the case.

(I think it was so in an earlier version, but no longer in 40d.)

Did you make a lot of clothing?  If worn clothing decays, it's value falls and so does your Total Wealth.

Exporting goods made domestically moves the value of everything exported from the Total Wealth category to Total Exports.
