Of dwarves and rotten cheese

I have quite a dairy industry going.  The problem is with the quick rot time of cheese.  I try to micro-manage by only requesting 3 cheeses made at each farmer shop.

However...

Every time, some dwarf goes and makes about 20 cheeses at one of the stations.  I am completely sure I don't have the repeat function turned on.  So that big list of cheese naturally rots.

I have no idea who keeps making more cheese than I ordered, but its as if they enjoy the miasma of rotting cheese.  Has anyone else had this issue?

Cheese and soap are two things I never learned about.  I couldn't figure out how to milk anything, and if you're buying the milk, why not just buy the dang cheese?

You need to capture a herd of purring maggots - it requires animal traps at a bottomless pit or chasm.

I recommend having a dwarf whose only labor is food hauling. His job is to keep workshops cleared. That should help you get those cheeses shifted before they rot.

I have a few of them.  However, one of my fortress's main industries is food, I'm swimming in all varieties of it.  Theres a bit of reorg of my stockpiles at the moment, so they get to what they get to  ::)

For now I'm just stockpiling dwarven milk and making cheese later.

In addition to what Derakon said, if you get really, really desperate, you can quantum stockpile the cheese on a food stockpile.
