Is there a way to mod the game so that adventures without civs (minotaurs and so forth) start with some basic equipment such as a backpack, a waterskin, a weapon and maybe some leather armor? Starting out with nothing at all can be a big disadvantage, to say nothing of the difficulty of trying to wrestle an ettin.

If your adventurer is [SIZE:7] you can make a fortress beforehand and use a reaction to pump out free adamantine equipment- or any other kind, for that matter. I did that, along with making humands [DAMBLOCK:50], and killed nearly two whole towns before being strangled by children.
