Yes, I am proposing that these professions be added to the game.  Yes, many of them would require the economy to be in effect.  However, look at these jobs not just as what they are, but the more abstract concept of their function in industries.

These are all professions that have an individual receive a product from the production aspect of the industry.  They take that product, and they place it into secure storage.  This storage is inaccessible by the general public, and if someone desires something that has been stored, they must speak to the worker that does have access to the controlled stockpile.  After the transaction is agreed upon, the worker takes a unit from his stockpile, and gives it to the purchaser.

Want a sword?  You can't just pick it up from the fortress weapons stockpile.  You most track down the quartermaster to purcahse it from him.

Want some aspirin for your headache?  You can't just drag it up from whatever stockpile it lives it.  You most go visit the apothecary to acquire it.

Want to get some coins from your account, or deposit some coins you got from selling something to someone, go talk to the banker.

I originally had this idea as a way to put in tobacco and pipe weed without having the doper tinge on the topics.  It progressed to include an apothecary, which made me think about more professions where an individual is tasked with the storage, security, and dispensing of controlled materials.

What if the workers are asleep?

You need multiple of these economic workers... and they could be branch off's of guild...

Stores are assigned randomly and mostly do what you describe, what exactly would this add?

Fleshing it out?  Making it easier to deal with?  Preventing the doping thing he talked about?  Reducing coin production woes?

I can see quite a bit.

I dont see this feature implemented very soon as there are more urgent things to do in the economy system. But with an expanded shop-system there could of cause be jobs like apothecary, quartermaster, banker etc.

I would approach the problem in a different way. I don't like to have a 100 dwarf fortress with several apothecaries, bankers etc. It's just overkill. Also I don't think it is necessary to have a guild just to sell some medcine to your dwarfs.
Instead I hope that the sleep/eat/work etc. cycles get synchronized in the future, then shops could easily have opening times that differ from the working time of your other dwarfs so that the miners and other workers can buy some stuff in their break with your shopkeepers being there quite reliable (only absent if they want to buy something theirselves and even that can be controled with opening times longer than the usual break time and a forced opening time during the main break). I think those schedules even don't need to be micromanaged (keep the possibility of cause) because there aren't many possible settings and a default schedule should be good in most cases.

Or better yet, have 2-3 separate sleep cycles that overlap enough so that any dwarf can get stuff at the apothecary, but we don't spend 1/3 of the game waiting for everyone to wake up.

Your right here in a way, I think despite being unrealistic there should be a day and night cycle in fortress mode that doesn't match the dates but the current number of going to bed. Dwarfs with cave adaption might have a chance of going to a shifted sleep cycle but nights with less activity (or working activity) provide some possibilities as well. Nocturnal civilisation should try to attack/send thieves you more likely during the night and parties could start around the time everyone goes to bed and in the morning your partying dwarfs are tired and work a bit worse during the next day. (Parties should provide positive effects like happy thoughts, better social skills etc. as well - enough so that you want them from time to time but not all the time)

Well, in real life we do have the night shift.  All day, 24 hours, there are people working.  Since dwarves will be working underground anyway, I don't think light will be much more of an issue than it normally would be.  So it's not too unrealistic.

Night shifts didn't really exist in the 1400s

A monthly of bimonthly night cycle would help with this sort of thing. There was a thread about that before

Again, speaking of dwarves.  They are already living underground, and need plenty of lights to work and get around during the day.  Why wouldn't they do that to keep things moving?
