At least it is not as hard to install as Ultima 7 was... when Ultima 7 was brand new... I remember it took like 5 hours tweaking around to get Ultima to play for the first time. Exult was a godsend. Ultima 7 is prolly one of the only games that got easier to install as time went on:-)
Ultima 7 did its own management of 32-bit-accessible memory (extended and expanded memory) instead of using the standard.  Moreover it did this using an undocumented and unsupported CPU mode.  I looked into this mode once and decided to stay far, far away from it.  I still have trouble believing that Origin released a game that depended on it.

I haven't seen anybody mention Nethack as a must-play.  It's not for everybody, certainly, but it should be tried.

Egads, 0x517A5D. I can't begin to understand why they would do that.

NetHack! How did I forget? Definitely NetHack. While on that subject, Incursion; where a swarm of monkeys can hide under a stack of bolts.

They did it for performance reasons.  What they did was both faster and easier to deal with than the standard ways.  I found an article on Wikipedia about it: Unreal mode.

Operation Flashpoint.

And afterwards you realize that Halo on "Legendary" and Call of Duty on "Insane" is for pussies.  ;D

I second Cave Story and add World of Goo to the list.

Black and White
Black and White 2
Oblivion (Hey, i've never played Morrowind, so i have no idea how to compare the two, but Oblivion is atleast a nice game.)
Civilization (Any of them.)

Hearts of Iron <- for hardcore historical-minded war-simulationists. (RECOMMENDED!!)
Europa Universalis <- Less hardcore, civilization building

Oh, HoI 3 will be awesome, I knew it.

Also:

Majesty (Sequel is under development)
