The police aren't so bad if you only fight one or two at a time. If they raid you, then it gets a little tough.

Now see when Niobe, Ghost, Trinity, Morpheus, and Neo all show up at the apartment with the rest of the CIA, you're in deep, deep schist.

(And no I didn't die and we do not have to start over. That was Wild Goose that died.)

Yeah, again, this time in a Plastic Factory.  Back to nonviolence.
This time, I'm going to try toeing the line and not go near any garment factories, see how that works out.

Got frustrated and started harrassing websites and putting up graffiti, got sentenced to 84 months.  Got my gang killed trying to bust me out.
I think I'm going to head off to a garment factory so I can start over.

On the topic of cops and guns, I played the official Bay12 version (the last one that Toady made) for a while before I tracked down the new (community-maintained) one, and it it just me, or are firearms a lot more deadly now? Either that or the cops I get into it with now are more skilled or have bigger guns...

If the cops are overpowering you, could try getting some weapon skills.

Some mook with 20 agility, 20 pistol skill, and a .44 magnum with a schistload of shots, can wreak some major havoc.

The security guards and the police carry better guns in the community version, especially in the latest version where police gang units appear from the start, armed with MP5s.
