Ninja Gaiden, Shadow of the Ninja or Zool maybe?  I'm not really sure if there were any real stealth games prior the the PS1 ers though :S

Alright, here's a humdinger.

When I was in like third grade (so late 90's) my elementary school had a Computer class, which did some practical things like touch typing but was really mostly computer games. While reminiscing about the games we used to play, my friends and I all clearly recall a game we can't figure out the name of. It had a dragon in it that guided you around the different rooms or whatever, and there was a bunch of different activities you could do. I remember there was a painting game that was pretty cool, and I think there was an alphabet and a math game too. I kinda want to say the dragon's name was Snap? I know, not a lot of info to go off of, but it's what I've got.

It was a PC game. It was almost entirely in some asian language that I won't attempt to name because it'll probably be the wrong one (but I think it was japanese).

It was a PS1 game.  You played a skeleton with one eye.  There were like a billion different weapons.
