I'd go with cooking (better food or at least a small boost to that level), climbing (I've lost more than my fair share of Fins with the lack of this skill!), swimming. . . (OH GOD SWIMMING! THE SWIMMING! ALSO A KILLER IN DF PICK PICK PICK!!!) wood carving (better trade goods) and timber craft (faster chopping, unless of course you're going for nomad) or physician (if you can spare an extra set of threads, literally).

I say we open Tracking, Swimming, and Shield, and boost Woodcarving and Timbercraft.

Have more options available to improve later on, and be a better crafter.  Maybe build a bow.
