Dwarves striking down elves(okay, now you're just making things up )
and various other misfortunes happening to elves

Go into the key bindings and turn on that setting that gives a lot more details about your engravings. Elves had probably been losing wars to dwarves and humans during the entire world-gen.

I really wish i had crap like for engraving in my fortress all i get are Urist McLeader ascending to leadership of my fortress. And Urist McLeader striking down a wolf. And Urist McLaeder striking down a kobol theif. I swear why does one of my engravers have to be married to the guy and the other his best friend. Yeah i get that your friends but my entire fortress doesn't have to pay homage to the guy...

If a fort lasts through a tantrum spiral, you can get some interesting engravings. Pretty sure there are some of urist mcmadhammerdwarf wounding/killing some of my dwarves-not to mention my marksdwarves shooting berserkers (till they went melancholy). And many are of dire wolves screaming, it seems (war dire wolves were trained in an attempt to combat late berserkers).

Edit: If something attacks your dwarves and kills them-or vice versa-you also get more varied engravings. Find some dangerous wildlife and send the next group of immigrants towards it. For REALLY interesting engravings, look for the HFS.

In my barracks in the last fort, there was a masterful engraving of our Expedition Leader.  He was surrounded by cave spiders (His fear).  He looked absolutely terrified.

You have it easy, my dwarf (and mayor, for now at least) just makes engravings of Elves, thats right, JUST Elves. And there aren't even any in the world to trade with. I checked him in legend mode and his parents are unknown. *shudders*

I had a ledgendary Engraver who spent his entire time engraving the Mayor being terrified by rats.

It was probably the symbol of either your civilization or the local dwarven government. Think of it as a flag. And be glad if it's something cool like a diamond, and not, for example, cheese.

The symbol, according to my coins were dwarves with dwarves.  On both sides.
