As you can see, I plan for four different standardized blocks. The farm blocks hold 4 farmers while smithy blocks hold 6 smiths, which from my experience is about the optimal farmer-to-metalworker ratio. The smithy block can be altered to replace one of the smith house slots with a neighbourhood smithy that contains fineries, anvils, charcoal kilns or whatever the residents need. Any new professions can be fitted into this block size to make new standardized blocks. Hunter blocks are not planned, as hunters need lodges a bit away from civilization where there's more game.

Now, in the 4 figures below, we see the town as it develops.
Phase 1: The town has just started. An area is enclosed, centred on a mine. Cabins are built here for temporary lodgings, smelters are built in or around the mine (I think the former would be more efficient), and general gathering area for trade and stuff is also included. In addition to this area, a public farm area is built. It doesn't need to be walled right away, but a palisade will be added when it's convenient. Communism is used in this phase.
Phase 2: Private quarters are added, one for farms and one for smiths. This is the start of a gradual shift towards economy. As you can see, a wall is knocked down to integrate the whole town with roads.
Phase 3: Continued growth. New blocks are added to the existing ones, and walls are again knocked down to integrate the whole town with roads. Alternatively, instead of knocking down walls cart gates could be placed, which would normally remain open but could be closed down in case of emergency to provide multiple layer defence to the town centre.
Phase 4: An enclosed forest lot is added for more convenient charcoal making and general wood needs. As you can see, when there's just one lot being added, a free-standing wall is extended from the town core to enable us to build an enclosed wall that connects the new lot with the rest of the town.
Further growth: town blocks are added in a spiral fashion as the town grows. Where needed, additional public lots are added. In case it's needed, private housing blocks near the town centre can be re-purposed for public use, and the people living there could move to a new block. Of course, in case of such eviction (which shouldn't be done lightly), the whole village should help them move and rebuild at new location. In fact, I think that the whole village should be helping to build all blocks, as new blocks would mostly be added for new players who would have a hard time building up all on their own.
