Mine usually survive all types of combat, but they tend to enjoy dodging into a chasm or plummeting down a garbage chute.

It sounds like the OP solved his problem, but I find that dwarves don't spar unless they have someone to spar with. From what I've seen, a sword dwarf won't spar with anyone but another sword dwarf. You need to make sure you designate your weapons in even (or large) numbers.

I've had a master swordsdwarf who enjoyed to chop hands of recruits, so I didn't encounter such problems.

I feel obliged to mention that if you train a legendary wrestler and then he goes and grabs an artifact weapon that you will get a lot of dead recruits unless they are all also very legendary wrestlers. If he spars with the ultra-dodge infinity toughness group long enough to actually get good with the weapon your new recruits should be pretty safe but otherwise-

Well, imagine a clumsy Superman with a sword. He won't try to cut off both of your ears and cut out both of your eyes in one attack but you kow sooner or later it's gonna happen.

Seconded. I lost so damn many recruits and guards to that syndrome in my last fort.

Make sure you have weaponry availiable for your newly assigned trainees to use, elsewise they won't have anything to do but wrestle.

It's a good idea to train them to legendary wrestlers before training other weapon skills. Training wrestling is insanely fast (at least in comparison) and gives dorfs nice attribute boosts + wrestling itself helps alot against enemy wrestlers.

I always find as soon as they get 'hero' level in wrestling they refuse to switch to a different type of weapon for training.

Nope, I've retrained champion wrestlers by switching their weapon through the military screen. 'm', then 'w', and select the weapon.

I really think this is because of the issue where they are holding stuff (armor, usually) in their hands that they ripped off their training partners.

As previously suggested, try setting them to Clothes and no Shield, and wait for them to remove all their armor, then re-set your real armor preferences.

If that doesn't work, go into their v-i inventory list and mark everything for dumping.

I told them from the Military screen.
I gave them all the time they needet most of my dwarfs are Champion Wrestler by now.
Most of them hold thair Weapons and a Shiel in the Hand and still becoming wrestler.

I got this prob for several versions now.
And in many games.

I try to strip them now.

that could very much be a cause right there.

make sure they are in diffrent hands.  I had one that INSISTED on holding his adamante sheild and hammer in the same hand.
