Recently I've been pleying the "Never head up, never establish a base" game. I bring two sapling down with me and never see the light of day again.
What about food? And that kinda stuff?

Exploring is the best part of minecraft, and all most of the cool stuff is up top.
I like doing subterranean playthroughs as well. One of my favorite Minecraft experiences was attempting a Multiplayer 404 Challenge on the Livestream, with permadeath rules for each player. Explorers would buddy up to ensure safety, while others guarded our base and tended crops to make sure we had a safe well-stocked place to return to. It was a lot of fun... RIP Bones the Quantum Skeleton.
Anyway, thinking back on that, and on hearing that some of you like subterranean runs too, while others worried that it might get a bit boring, I decided to whip up a more interesting subterranean custom map using terrain generation scripts.
It's a sprawling cavern complex, similar to what you'd get if you rendered default MC biomes in the style of the Nether. Though trees and natural sunlight can be found, it's pretty rare. To remedy this, there's an optional chest with some starting lumber and saplings not far from the start location. Also, note that the terrain was only generated out to about -500 and +500 in all directions, so anything outside that will revert to vanilla MC terrain. Still, since the caverns wind around and overlap, you probably won't get that far unless you try to.

EDIT EDIT: Trying this in Hardcore was actually really exciting. Just found a big enough clay deposit to make a lot of bricks, and I hoped to build a creeper-resistant shelter out of it, only to uncovered a creeper right behind the clay. The explosion hurt me pretty bad, so I turned toward my shelter, ans dashed across a makeshift bridge I'd built to cross a chasm. About midway over, I got spider-tackled into the chasm and nearly died. Stuck on a cliff with a spider in hot pursuit, I made a flying leap to some free-hanging vines, and used shift to grab hold and slowly descend deeper into the pit. I almost made it to an overhang with some glowstone light, but the spider followed me down and did me in.
