Custom crafting recipes aren't possible, as, the actual display is still governed by the client.
There are other ways to combine things on the server side, however.
O rite, i fergot  :P

 The old Nations at War server had a plugin where if you put down the materials for a custom recipe and clock on the output box you would get the custom result. It wouldn't show in the output box, but you would still get it. It's how we got leaf blocks and converted obsidian to diamonds.

 I have no idea. A lot of it was custom code for an older version.

Is it just my friend, or do simple redstone devices create intense lag over networks?

I mean, my friend created a device that made 4 separate redstone torches to flip on and off, not unlike a neon sign, to signify the entrance of his house. He had to deactivate it though when the lag was becoming unbearable.

Heh, I didn't even notice when it happened. Was too busy playing minecraft.  8)

But seriously; 30 minute DDoS's against login servers are nothing more than a token gesture. If they kept it up for a day, two days, or a week, then people would be justified in being PO'ed. But a 30 minute inability to log in to play a game is less than the average weekly downtime for server maintenance in many games.
