 I realize after becoming a knight I'll be the designated tank, but is their a higher-up class for tanking, or will I be surrounded by angel knights, saints and who knows what else that sounds awesome while my beefy character is still a knight?

Yes, there's Dragoons, who rock hardcore.  You have to kill five dragons first, but that's not a problem.  Unless shoruke doesn't bother farming random encounters, which seems likely.

Nope, has to be real kills.  Random encounters are thick with dragons though.

And knights are a decent class. They can heal, after all, unless you want me to switch your healing spell for Lightning Bow (that move Rictor uses). Dragoons have a little bit higher defense, but their magic might as well not exist and they're slightly slower. In terms of attack power, knights, swordmasters, dragoons, and angel knights are all roughly equal. It's your call.

(I've seen a FAQ for an all-knight party once. It was actually pretty promising.)

 If nobody else is designated knight, I suppose I shall stay that way.

 Still, the sheer kickassery of the name dragon knight is promising.
