Oh that darn smelter.

I'm sitting here wondering if I can make the smelter spit out ballista arrows, and now I'm wondering if there is a list of what the thing can and can not just produce out of thin air.

Anyone have one, or care to contribute?

You should be able to make just about any item. The complete list of item tokens is on the wiki here.

Seriously, why aren't they on the same page? They used to be that way, but someone split them for reasons I can't fathom.

They were split because the combined page was hard to organize, and because Reactions summarizes the whole process nicely.
