Well, I can't sadly I can't force my champion wrestler Guards to give up their military life without messing with utilities.

But about the jail time: My jail chains all overlap to form a single big jail room with 5 chains. Is this incorrect? Would my dwarves receive jail time if I had separate, individual jail cells?

It's kinda workable.  I've found that group jails like that work okay until you have someone in jail who has gone berserk with rage.  One raging dwarf in you group jail will mean that no other prisoners will get fed.

Urist McHelperGuy cancels Give Water: Interrupted by Crazy Mofo.

Ideally, having separate small cells means that the crazy guy is behind a door, and the cooperative prisoners can be given food and water without interruption.

On the other hand, your berserk guy is as good as dead anyway, so putting a military person in the room to put him down solves that problem I suppose, and the group jail functions okay in that sense.

Here's an idea.

Your fortress guard: Only recruit dwarves who've suffered injuries that keep them from sparring. Busted lung? Welcome to the guard! Wounded spine? Welcome to the guard! No hands? Welcome to the guard!

Tell the guards to not use any weapons. None. Nada. Hand-to-hand combat only. ONLY! If they were wrestlers during their military days then DON'T RECRUIT THEM! only those who can barely tell their thumb from their toe gets to apply.

This will likely help your dwarves to survive the beatings... as for the hammerer? He's a tough one. Try to arrange it so he falls asleep on a weapon trap or something. Don't make it lethal .. just.. hurt him good so he can't get out of bed ever again.
