If you want terrifying, game-breaking, mind-blowingly fast speeds, raise the FPS_CAP to something absurd like 5000, lower the G_FPS_CAP to 10ish, and add [SPEED:1] to dwarves in the creature_standard file in the raws.

Your dwarves will be fast as shit but don't expect to have a fair fight until you remove that speed tag, since your dudes could hit their enemies like 700 times before the enemies have a chance to retaliate.

Also, if you only have 7 dwarves, don't expect to see what they're doing with settings like that. Just designate some squares to be dug, unpause, and try not to blink.

yeah, upping fps to that extreme really breaks the game.. Only reason I ever use it is for megaprogect construction where you have LOTS of stone to build.

Ask not what the Dwarfs can do for you...
But ask.... why are they drunk all the time?

Then raise the FPS-cap, that'll make time go by faster, assuming your computer can go higher than 100 fps. :P

Since the game already tries to run as fast as possible, there's no speed-time-up option, except as already mentioned if you increase the fps cap.
