I think it'd be useful to be able to set channel depth. For example, if you're building a reservoir, you can create a channel of depth 1/7 on the side so that the water has somewhere to go if it overflows, eliminating the need for pressure plates, which can malfunction. If dams that overflow are ever implemented, it would also be handy to ahve this so you can control the overflow direction. It could also possibly be used for the creation of long staircases.

From my understanding a tile filled with rock is not occupied by 7/7 of rock. Its just 1/1 rock, with a floor. So it would require tiles to have yet more information attached to them to deal with this.

You could already deal with by having a floor grate nearby to redirect excess flow down another duct. Any overflow too little to go down this is just going to dry up on its own.

How about a construction that allows the varied height. That way you don't have to worry about that information being tracked for every square.
