Well, what i'd like to know, is how can a tree be made into a wall that is TALLER than it (even treees don't reach the next Z level) square, and possibly even taking up more space (doesn't water pass over trees?)

Dude, one "logs" makes one wall.  You get that from one tree.  And, for all intents and purposes, trees are just constructions that grow on their own and require a special profession and item to deconstruct.  Not even magma will destroy a fully grown tree in DF.  A tree in a magma channel can really mess up your doomsday device plans.

Actually, the ballista bolt takes one log.  Even though the graphics take 3 tiles, it takes only one tile in the stockpile.  It's long, but thin.
