I don't really think an entire village should specialize in a type of beer to be able to make something good
That said, exceptional+ liquor should require decades if not centuries in a barrel and be importable for ludicrous fees. You could use it for all sorts of things. Nobles demanding it, providing it for a special occasions for the civilians, making it your primary export in the long term etc. There'd be little incentive to make 20 different brands of booze when you can order the types you don't make

These are the kinds of problems booze was invented to solve, in the first place
I'm not saying that there should only the one kind of booze your Fortress ever makes, or even that it only make one really good kind, and a bunch of swill, I'm just saying that I don't think every single Fortress ever needs to be able to do exactly the same things, at exactly the highest levels, every single time.
Even all of France doesn't make every single kind of great wine ever produced. Hungary makes Tokaji, for instance. Porto (Port) comes from Portugal.
There could be a few kinds it does very well, and a selection that it does ok, and then several that it imports. Some of those importations could be further processed at your Fortress too, aging it (perhaps in different barrels), mixing it with herbs, or other types of booze, etc.
