I accidentally killed everything. Is this bad?

Hey.

I've got a fortress in a forest, next to a river and between two mountains. Basically it's a number of houses surrounded by a wall and a huge-ass tower.
My problem is that I've fished all the turtles from the ponds so they're extinct.
I hunted and killed all the animals so they're extinct too.
Now the fish in the river have all died and my dwarves have been forced to go vegetarian. Goblins attack but break against my superior defenses (arrow towers connected to the central tower through tunnels, trapped tunnels, legendary military patrols)

So my fortress is dull. Everyone is happy and have lots of babies and the goblin sieges are laughable jokes. I don't want to just throw all the hours I spent out the window and start a new fortress but this region is DEAD and nothing ever happens.

Do I need to kill all traders that arrive to get some pleasure out of this fortress or what?

At this point, it's always fun to do megaprojects. These can range from a burial dungeon over an amphitheatre to flooding the entire map with magma. At this point, your only limitation is your own fantasy. Take some time to design whatever it is you're going to make and then go and build it. A perfect example of such a megaproject would be Numberabbey's adder. You could also join the quest of perfecting the thing and try to add your own features. But as I said, your only limitation now is your own fantasy.

Cut down your defences to give yourself more of a challenge when the goblins come.

You could fiddle around with your goblins in the raws.  Increase their size and damblock by a factor of 10, and I don't think you'll find their sieges "laughable."  More like "horrifying."

Try making a Goblin Drowning chamber for those who dare attack youre castle. its funnier to concentrate on experiments then focusing on youre defence.

Figure out a way to create a shower for your dwarves...

A shower that uses blood instead of water.

If you mix blood into the water, by say...  Having a captured goblin try to run to safety through a weak weapon trap with a grate nearby to collect the blood, you could infact make a blood shower/fountain.
