They taste exactly like a specific kind of tortellini.
Seriously, fist time I ate those tortellini my fist thought was "wow, these taste exactly like plump helmets!". They are still my favourites.

Since dwarfs grow and eat them I guess they taste beer or ale, or maybe booze.

Well, we can assume following things:
1. They must contain sugar because they are brewable.
2. They either are very big or very nutritious, because a plump helmet seems to be an entire dwarven meal (and     dorfs eat way more than we do.).
3. As they do not rely on photosynthese and don't have another source of light either, they are probably brown/black.

They're mushrooms.  They don't do photosynthesis.
Cave wheat, pig tails, quarry bushes and sweet pods have seeds instead of spawn, so I think they are just plants that adapted to a dark environment.
Kobold bulb sounds more like a sort of bulbous root than an onion.
Perhaps rat weed has thick, hairy roots?  Like rat tails.

I think Kobold bulbs look like poppy bulbs, except dark yellow and pointier crown, sort of like a tomato

I think Tolkien mentioned them somewhere. Or, he mentioned some kind of fungi that dwarves eat, and I just made the obvious connection. I think he described it as tasting like some kind of bread maybe.

I think they taste rather like particularly sweet asparagus (and with a similar texture, but slightly more "meaty"), with maybe a hint of apple and a hint of smokeyness, and with a strong earthy/mushroomey undertone.

I imagine them tasting like bland peaches, with a slight stringy texture similar to that of a pineapple.

Fisherberries I imagine as tasting like plums, but being very small and a bitter aftertaste.

Quarry Bush Leaves I imagine as being very smoky and grainy. Great when steeped in salty water and used as a topping for any of the sweeter plants and fruits.
