I want an underground water source, but dont know how to get one. Please help.

Change those in the init file.  Then use Site Finder or your eyeballs, and remember how the map was laid out after you embark.

The Well building is built in open space, meaning a (h) channeled square that's next to a floor square. You need to the floor square so there's somewhere to stand while building the well, and somewhere to drink from once it's built.

The open space square where you place the well must be directly above water.*  This could be an underground river or pool, but the easiest way to do it is simply mine a passage it from a brook, river, or pool, so that the water goes where you want it to go. Then you build the Well in the space above.

*Salt water from an ocean won't work.

Will pools flood my fort if mined into?

I dont get how to do the well.....

Pools won't flood your fort (unless it's a small fort) because pools are finite in size, and the water will likely evaporate before it fills the whole fort.  Rivers and cave rivers do present a flooding danger, but will only flood up to the original water level, assuming that you haven't pressurized them somehow.  (If you don't know if you did, then you probably didn't.)

Pay special attention to the part about using hatches and doors for safety.  Hatches and doors completely block water when they're locked ("forbidden"), so use plenty of them, then if you DO get a flood, you can block it off so that only a few rooms get flooded, not your entire fort.
