It uses the Mining skill to determine weapon proficiency (and thus amount of damage), yes, but it deals Piercing damage, as a spear does.

UNARMED is their technical status in Fortress Mode, but yes, it uses MINING as its skill.
Unfortunately, this is tied to the [DIGGER] tag that has it used for mining, so modded-in non-digger weapons wont be equipped by UNARMED soldiers... in fortress mode (without the "ranged weapon shennanegans". which is awesome).

in ADVENTURE mode, you can make a weapon just plain use any skill, equip it, and gain that skill. (I prefer "intimidation")
