Problem with cages

so i'll have animals in cages and stuff, how do i let them out?

The cages must be built first, then 'q' over them. The cage should have a list of current occupants. When you view the list of animals and other caged hostiles, a green + will indicate who is currently assigned to the cage. Push enter to unassign them, and a dwarf will come and let them out.

In the case of wild animals or goblins, they will be moved to another cage. If you want to let them out, you will have to build a cage and link it to a lever.

On that note, lets say you've caught some animals that were let loose the last time the elven caravan had an unfortuante "accident" how do you get around to taming them? I tried various options at the kennel but I can't seem to figure it out.

The animals elves bring should already be tame. If you're referring to berserk caravan animals, I don't think you can tame those.

Also you can create a pit by assigning a zone over a ledge so that it is hanging over a z level. You can then assign goblins or animals to that pit, but if they aren't next to it and are wild or goblin the dwarf will get scared and run off when he lets it out.
