I am playing with a heavily modded game, so I tend to use war bears, war gorillas and other exotic/fantasy pets.

I've currently got half a dozen of tame rhesus monkeys.  I'm thinking of modding, so they can fly.  If I do I'll make them trainable for war... and change their color to purple.

That's what DF needs, The gutbuster brigade.  Screw that elf and his cat. Thibbledorf Pwent is the real hero.

The local wildlife is my current fort have been goats, muskoxen, and horses. No carnivores whatsoever! Gaargh!

Next time I embark in a heavily wooded area, I think I'll get myself some War Raccoons.

 Nope.

Wait, can we also make hunting versions of animals? I know they only get a sneaking bonus from it, but hunting eagles would be grand.

Obviously

It's not so much a sneaking bonus as it enables sneaking and makes the critter target the same enemy as the dwarf

The real question is, is trainable tag enough to make tame beasts aggressive without actually being trained and thus doing double damage?
