From what I hear, mushrooms have a lot of cellulose-which turns into methanol when fermented.

So I'm presuming that either Dwarves drink alchohol so strong a shot can turn humans blind, or that they're just sugary enough to ferment without killing you.

The idea of Dwarven Wine being antifreeze is a decidedly strange thought.

Every Plump helmet tastes different. The reason being they're shrooms. They mess with your thinking processes. Strange moods? Dwarvish insanity? yeah. All that is because of plump helmets being the primary dwarvish food from birth. "What if my dwarves don't eat plump helmets?" Well they might not in your incredibly undwarfish fort, but they did before they got there! So they're heads are STILL messed up.

This also explains why dwarves are so stupid at times, they're high.

Well, you'll note that all dwarven brewery takes place at a still, while feeble-constitutioned humans use stills only to produce distilled spirits, like whiskey, vodka, brandy, etc.  And contrary to popular misconception, it's quite easy to get rid of methanol by distilling booze.  Distilling definitely does not magically create methanol out of thin air, like most people seem to think.  Good old American prohibition era myths.

I like to imagine that all dwarf drinks are distilled to 80 proof or stronger, and bear absolutely no resemblance whatsoever to their human namesakes.  Especially because dwarven beer and ale are not made from grains!  Brewing preserves the seeds, after all.
