I think they would taste kind of like Portabella mushrooms, except with a more spicy, pepper taste to the skin. The juice would taste slightly like ginger.

That way, Dwarven Wine would have a very distinct spicy taste. An extra kick to keep your dwarves running.

Ug. mushrooms are not my kind of food, so I try not to imagine what they taste like.

Probably cave scrapings.

Although purple is a strong contender. Maybe they just sprinkle purple on the ground, the mushrooms grow naturally, so its really just symbiotic flavour seeds.

Same here. I think the wine would be mostly tasteless, probably bitter but unappealing.

Just as a side-point, they don't actually eat the rock nuts.  They eat the leaves from the quarry bush.  I think of those as kind of like bay leaves.  I do confess that I think of plump helmets more as purple than as mushrooms, although I do know they are supposed to be mushrooms.  Maybe they are beets?

Someone once told me that beets could not be fermented, and that was why beet juice was in V-8 juice.  I tried to ferment some V-8 juice, and it ferments quite nicely.  It made a nice, dry, straw-colored wine.  Unfortunately I forgot that V-8 juice has salt in it.  I drank the wine heated, in a cup, like an alcoholic vegetable broth.  It was nicely warming on cold winter days.

Beet wine? That sounds interesting. In DF, we have alcohol made of everything except... well, grapes.
