I started a new fortress, built a loom and noticed the "collect cave spider silk" job was active.  Then I noticed "cave spider silk web" was in my stocks screen.  I zoomed in on a few.  Most were outside but some placed the cursor underground in an unrevealed area.  From this I gleaned the existence and location of a hidden cave.

So it would seem that items in unrevealed areas should not appear in the fortress stocks.
