There really needs to be a way to make soylent green. I'm getting tired of digging tombs.
Get Dwarf Companion. You can set anything, and I do mean anything as butcherable. It's also handy for keeping up with your dwarves' health and actions, etc. without having to go to the Units menu.

Dead dwarves make *Fantastic* Bridge-a-pult ammunition.

"Yeah. My plan was to drop some kittens into the siege, and have my dwarves freefall into battle, landing on top of the kittens. The plan was kinda dumb though because the kittens were standing on grates, and the goblins killed them with arrows just as I was releasing the freefalling dwarves. So the dwarves weren't able to land on kittens and just fell and died."

Urist McPeasant: Thrown in a coffin, stuck in a coffin-storage room.
Urist McNoble: He gets a 3x1 smooth rock tomb with a rock-fall trap thrown in there to make him happy. Nothing extravagant.
Urist McSoldier/Starting seven: He gets a 2x3 tomb with a decent trap and a few engravings for his bravery.
Urist McChampion/Urist McUsefulcraftsman: A 4x3 tomb with statues and weapon racks and armor stands, walls fully engraved. Plus traps, of course.
Urist McAwesome: a 10x7x2 tomb chock full of valuable statues, weapon racks, and bears/tigers/whatever's on hand, who're connected to a pressure plate.
Urist McBestsoldierever: A huge 25x15x3 malsoeum, completely engraved, with 3 z-levels worth of gold/platinum/some other valuble metal statues lining the walls, The coffin on the 3rd z-level, with ballistas and caged megabeasts on the lower level, traps lining the 2nd z-level's paths, and a weapon trap with the dwarf's personal weapon loaded, along with quite a few masterwork weapons to shred the plundering filth to peices.

I'm way too nice to my dwarves.

Right now I have two burial chambers. one in my main hall/barracks where my heroes are interned. and one in the stairwell room at the base of my fortress where peasants are interned. Eventually, I will make grand tombs for my heroes. I don't mind deconstructing coffins to harvest the bones of the poor peasants who have died. Nothing is quite as fulfilling as using the bones of a dwarf who died of madness for want of a bone in a mysterious construction to fulfill the requirement for another (I have yet to get quite this lucky, but I have a stockpile with my mad clothiers bones right next to workshops for just this occurrence).

Does the resting place tag thing carry on when you deconstruct the coffin?

Low to High.

The starting seven, legendary (in useful skills) workers, champions, and particularly bad-ass soldiers get their own tombs (2x2, smooth walls, engraved floor).  Partly because they deserve it, and partly because the only think worse that one of my best dwarves going mad/melancholy would be one of my hard-as-nails warriors going berzerk.

Nobles get the same (or more, if they complain), although it grates somewhat that these poxy nobles think they deserve the same as e.g. the marksdwarf with 17 notable kills, including a titan and a named dwarfeating jaguar.  (Especially when the marksdwarf in question got evicted when the economy started she couldn't pay the rent on the room I'd given her as a reward).

Other dwarves get coffins in a communal "graveyard room" with smooth walls and engraved floor.
Logged
Engraved on the floor is a well-designed image of a kobold and a carp.  The kobold is making a plaintive gesture.  The carp is laughing.

I generally give my dwarfs 3x3 rooms and smooth them out and give them stuff if they go legendary on me...  I think start including coffins as room decoration.

Moderate/High Effort:

Each dwarf gets buried in a 3 by 3 room that is engraved as soon as they die, to have the best chances of getting an engraving of their death. Dwarves I like will be assigned a 5 by 5 room with 4 columns, that is once again engraved after their deaths.

...I hunger for a catapult that can launch my full coffins at my enemies. At least then, even in death, they will slay yet another enemy.
