Toady is almost done with his newest version. Bug fixing DOES take some time, but I expect by the end of august at the latest, he'll have the next update out

Watched the 40d ones to learn to play 31.
So what do you use at the moment spacefox or phobus? I know I couldn't stand the terrain on phobus.

A video I would like to see is one that covers work around for bugs major/minor, like bins being an issue minecarts dumping into a quantum stockpile with no bins on either works well. Beekeeping was another bug back in the day.
I'm not sure how many bugs that would need to be covered but some of the common ones, animals attempting to pathfind through doors and other issues people might not be aware of but might impact them greatly.

Yes, there are many new things in the game since in the last two major releases (40.x and 42/43.x). It is very hard to do a good tutorial on the brand new features because even the experienced players need to become familiar with the features themselves.

Anybody can make a video about Temples, Taverns, Instruments, Libraries, etc., it is relatively easy to build them, but there are some long-term consequences on your fortress. Often these features are bugged for some time after release (e.g. garden fruits and crops), so really the players of cutting edge version who decide to do a tutorial need to deal with these bugs as well, employ some soon-to-be-unnecessary workarounds, etc. You can't teach it much if you don't know if well. And all that takes time.

nothing much is outdated, but we could use some tutorials about the new features like the locations, the stress management (without cheating or editing raw) and some stuff about adventure mode but iirc he doesn't like that mode
