I'm complaining about how he -ran away- from the cute little fox, dropping his rum barrel next to a wolf pack in the process and causing two haulers to get slaughtered before I noticed and forbade it >_>

Yes it does, last I recalls. One of my markdwarf ran down and splattered some monkeys that came too close while off-duty sometimes ago... Course I might be wrong, I rotates squad stationing so might've been coming on-duty.

Happens.  It's kinda unrealistic that the wolf bit the dwarf's head off, but wolves should be very dangerous regardless.

Eheh yeah, that is true. In fact perhaps the best what you could do is to fall on the wolfey, since your maneuvering and attacking skill would be extremely limited in a full plate mail.
