I hate filler. If you want to dedicate a couple episodes to character development, fine, that's great. But make sure it's necessary, interesting, and for god's sake don't just do it because you're outpacing the manga.

I'd like to find a series without a Ms Fanservice

The Pastry Chef show I am watching has no Ms. Fanservice (tons of Mr. Fanservice)

Cooking Boy Mao gets a seductive female later, but she actually only plays Ms. Fanservice as a ploy... the second she doesn't have to do it she actually wears rather modest clothing.

You can also somewhat say that Fullmoon Wo Sagashite has no Ms. Fanservice because of how Modest Meroko is.

She is a Bunnygirl in a somewhat skimpy outfit... but otherwise she isn't all that sexy relative to other forms of fanservice out there.

Umineko doesn't really have one.  Just moderately skimpy outfits later on...

Plus I've noticed something very weird about the anime.  It actually CUTS OUT a scene in which the female lead appears naked (and leaves in the corresponding scene with the male lead, which I realised, on rewatching, has a rare example of male gainaxing).

Now he and Simon shall walk the earth together... and fight crime. I admit, when I saw the ending I WAS disappointed. Kamina was right there off the screen, and they never even show him in that last scene. Oh well.

As for Umineko, it's nice just because it's a visual novel without porn. Too few of those.

There are tons of visual novels that arn't porn... (a lot of dating sims are visual novels)

The issue is that the popular ones tends to be porns.

Eh, I'm not counting dating sims. And I was only really counting PC games. (the DS has a lot of VNs, but most of them are VN + some other gameplay mechanic like Phoenix Wright or Disgaea)

There are still a lot, and that list includes most of the best ones, but they're definitely fewer in number than the porn titles.
