How to lock enemies?

Well, I'm a newcomer to adventure mode and got the basic gist of things, but I just can't seem to grasp wrestling. (no pun intended.... OK, maybe pun intended) After I get my opponent unconscious, I start wrestling them. I remove my maul, my shield, and I change my combat preferences to close combat. I do A and choose my enemy and I grab one of their body parts, say, their head with and arm or hand. Now what? The wiki says I can progress to a lock, but I for the life of me cannot figure out how to. Can someone help me with wrestling?

You can only lock and break limbs.

For example:
-Grab Left Lower Leg
-Lock Left Knee
-Break Left Knee

Is it possible to lock animals? Those are the only things I've been killing lately. Oh, and an ettin. And the odd elf.

the ettin and elf should be lockable, though the ettin is a lot bigger than you so you probably won't succeed.  Most animals don't actually have distinct joints, so I don't think you can put them into locks.

You can't lock and break animal's limbs in an unmodded DF. You can only do it to humanoids. If you want some weak humanoids, you can find lots of ratmen, batmen, snakemen etc. in mountainous areas near the chasms.

There are also some other special moves except locking that you can do while wresting:

Strangling:
-Grab throat
-Choke throat
-Strangle throat (repeat this one intil enemy dies)
You can strangle most creatures in the game (exceptions are undead creatures and creatures that dont have throat like Giant Cave Spider for example). You can do it using any limb or even using your weapon or your shield.

Gouging eyes:
-Grab head (using hand)
-Gouge left eye
-Gouge right eye
You need to use hand to do it, so you need to drop your weapon/shield first.

Ah, that explains it. I've only been attempting to lock animals so far. Thank you for all your help though, guys! BTW, ettins are pushovers for hammermen. I was only proficient hammerman, experienced shield user, and armor user with all standard iron equipment and I beat it without a scratch. Literally. Did I just get lucky?

For some reason, that invokes an image of a dwarf very patiently bending someone's foot towards their hip with the same sort of torque you use to break a stick in half.

Yes. Once something like an Ettin or bigger gets a direct hit on one of your main body parts - head, upperbody, or lowerbody - it's usually over unless you have on great armor, or super great toughness.
