Either reveal.exe or stone_sense.exe. Reveal shows all underground tiles within a certain distance of the surface (including areas around caves, underground rivers, hidden fun stuff, etc) while stone_sense makes it so that every time your dwarf mines a given tile a whole bunch of tiles around it become visible. Reveal is more useful for a quick survey.

You are most likely to find coal in sedimentary rock.

You'll want to take a look at the Dwarf Fortress Wiki and the File Depot. The DFW: http://dwarf.lendemaindeveille.com/index.php/Main_Page

That will have a lot of info for ya.

No.
It reveals blocks you've allocated.
Allocations are made when you do something to that block IE designate a mining job.
Allocations are made from the top down, thus if you designate the entire z-2 for mining, z-3 will not be allocated.
Blocks are 48x48 and contain every z-level above and containing the lowest level you've touched.
This is why you're told to designate the entire lowest level for mining when about to Reveal.

Hmm is this stone sense reliable? I like to think of dwarves as knowing the rock so as long as the mod isn't terribly overpowered I think it would make sense.

Reveal does not trigger specific effects:

If you discover a Magma pocket through mining, you can build Magma Forges.
If you reveal.exe the Magma, you can't.

If you discover an underground river through mining, you get Tower Caps.
If you reveal.exe, you don't.

(I usually backup the game before using reveal, and then delete the revealed version. However if you make sure not to reveal any hidden features, your plan should work.)

Hmm the only thing I would be worried about is triggering the HFS to soon, I want a regular king.

Aside from a very silly programming error, now fixed, there hasn't been any reports of instability caused by stone_sense, nor any reports that it doesn't work.  So I think it is reliable.

Sadly, I also think it is overpowered.  The current release reveals all stone that is in a 17x17 square (a radius of 8 calculated in DF moves) centered around every dug-out square.

I have been meaning to delve into DF's internals to make the amount of stone revealed depend on the miner's skill level, but I haven't made much progress on that.
