More than one group of traders can use a depot, I'm using the sage and sodem mod and the elders and the drunks came at the same time lol. Is this normal or did this just wack out because of the mod?

No, this is normal.
In one of my fort , the humans and dwarves traders came at the same time. I was playing unmodded.

I don't think there are enough civs in vanilla DF to get more than one caravan at a time, so you could blame it on the mod. But how do you choose which caravan to trade with?

In vanilla you can often get the goblins and humans at the same time. You choose which to trade with when you (T)rade with them, you just select from the list of current caravans.

When you go to trade it gives you the option of trading with either of them.
