Perhaps we should have a 'Winery' building ware fruit can be turned into juice and wine, all that's needed is a barrel and fruit.  A 'Brewery' building would turn grains and sugar into alcohol and would require water and fuel to create the beer.

Don't you need to boil beer for long periods of time? Not to mention that some alcohols are created using singed and blackened wood

Not really.  Making beer only needs yeast and some way to keep the air out.

No, my dad used to brew beer all the time, and I don't remember him ever boiling any of the stuff.  Wouldn't that just burn the alcohol?

BEER

The sweet wort collected from sparging is put into a kettle, or "copper", (so called because these vessels were traditionally made from copper)[25] and boiled, usually for about one hour. During boiling, water in the wort evaporates, but the sugars and other components of the wort remain; this allows more efficient use of the starch sources in the beer. Boiling also destroys any remaining enzymes left over from the mashing stage.

Alright, I'll admit you may need heat, but I'm not sure you need an entire unit of fuel. One unit of coke is enough to provide enough heat to melt metal. I'm pretty sure you don't really need that much heat. Besides, kitchens produce roasts, and I don't think those use fuel.

All the information I can find about brewing in the middle ages indicates boiling (in a copper vessel) is essential.  Cold fermenting is almost certainly possible but doesn't seem to be at all the normal way it was done.  I'm not necessarily saying 1 coke is needed to make one 'stack' of grain into beer, the medieval brewers worked in large batches and I could easily see the efficiency is much more efficient.  People have long requested smaller sub-divisions of coke and all materials for that matter so reactions can be fine tuned.

These are dwarves.  They can make the beer by glaring at it 'till it ferments.  The wheat saw what happened to that goblin that tried to kidnap that planter's baby.

whether or not it's appropriate to charge dwarfs fuel for brewing is a totally separate question from whether boiling is required for making beer irl...
