I have several that I always seem to return to. It just switches which one I play currently. My favorite games currently are:
Dwarf Fortress (next release is gonna roxxor!)
Gearhead (veryinky's megamod is gonna roxxor!)
SAngband (if someone worked on it, it would roxxor!)

and finally: WoW (Playing the AH and making profit ROXXORS!)

Games that I feel I could always return to:

Elder Scrolls IV: Oblivion (There's so much to do in this game... I'm not sure I'll ever finish it)
Dwarf Fortress (The versatility that the player has in designing everything makes me really happy)
8BitMUSH (8bit.memoryleak.org 4201) (This is a text game but it's one of the best ones IMO.)
Graal Online (www.graalonline.com) (I used to play this all the time but haven't for several years, but I could come back again, I think)
Black & White (haven't tried #2 yet, but #1 was awesome.)

So difficult to answer as so many games are so great each in their own way.

I would have to say though that the best game ever is the Half Life series, and if a series cannot be chosen, then HL2.

I have been a gamer since the Atari 2600. There are games you just can't stop playing... there are simply too many for me to list that fit that category, however a few that stick out in my mind right now:

Doctor Mario
Quake 1
Halo: Combat Evolved
Roller Coaster Tycoon (did you know this game was written almost entirely directly in machine code!?)
Asheron's Call
Railroad Tycoon 3
MechWarrior4: Mercenaries
StarCraft
Unreal Tournament
Unreal Tournament 2003 (not 2004, yick!)
Quake 3 Arena
Gran Turismo (the first one)
the original Sim City for SNES
Sim City 2000
Ogre Battle: March of the Black Queen (both the SNES and PSX version) (this would definitely be third in my all time best games ever list)
Battlezone 2
F.A.K.K.2

Bungie Software's Oni (definitely the best for a martial arts style game, and definitely the best for one with a female in the lead role that was not oversexualized!) (second, barely behind HL2!)

And yeah, Dwarf Fortress, of course.
