Well, two things. Wrestlers and lashers are the easiest with large stats and low weapon skills. Lashers' pain attacks are useless against tough dwarves. Wrestlers would find mighty dwarves tough to lock and throw about [I think]. Later as the dwarves gain skill they'd be able to take those with weapons.

EDIT: After reading a bit on the wiki it seems lashers aren't that easy. They have a tendency to target eyes or throats which can't be good. Losing an eye at this point would be very bad as well as getting a throat torn out.

Send Nobby against two Human Wrestlers.  Once he's locked in the arena, undraft him so he flees, just like he would in the Discworld books.  Well, only if he doesn't drop his equipment the moment he becomes a civilian.  If that problem comes up, make him a fortress guard member for the match.
