I tried building a tower in a bottomless pit once, but it didn't work out so well. Turns out, you can't build down...

... y'know, this makes sense?

But now I can't stop giggling madly over the idea of a dwarf, dangling from a rope with a pick and a bucket of bricks in hand, frantically yelling up at his compatriots,

"GET MEH OUTTA HERE, LADS!  THE BATS!  THE BAAAATTS!!"

 "Oh Armok, what is that? WHAT IS THAT??!!"
 Naked mole dog(Twenty z-levels down): Wurf?
 "AAAAAAAAAAAAAAUUUUUUUUUUUUGTGGGGGGGGGGGGHHHHHHHHH!"

I tried building a tower in a bottomless pit once, but it didn't work out so well. Turns out, you can't build down, so you'd have to start at the bottom. Also, the constructions were constantly interrupted by chasmic critters several levels down.
Can't build stairs down either? (not tried myself)

The other day, I embarked on a major river, and discovered it ran along the bottom of a 12-z-level-high canyon, with vertical walls and everything (everything being carp). I was instantly struck by inspiration.

Now I'm looking for a similar river in a temperate area. During the winters, I'll build a massive dam as close to upstream as possible; when it reaches completion, I'll wait for the river to drain, then build a city inside the dehydrated and de-fishnated canyon.

Flood traps are mandatory.

I have a fortress in a bottomless pit. The trick is to dig all the way at the bottom and make lots of blocks. Then build a floor at the bottom and work your way up. As long as you have something below you can continue to build.

A good-sized major river can be as wide as my window. It'll be bad enough for my FPS without throwing a few dozen pumps into the mix.

Can't build stairs down either? (not tried myself)
If I recall correctly, either you can't build them at all, or you can't build a matching up stair on the level below.

The up stair needs support when you build it.

but all this is easy to solve.  Just build a floor hatch and lever, and draft your masons to stand on it.  Soon... and leaving a mechanic on each level, you should be able to get them near to the bottom.

Yes, They have been built in Pits and even in active volcanos.

I built a tower inside a circular chasm once, then flooded the whole thing, so there was nothing but a single tube connecting the fortress to the outside.  some hatches in the bottom allowed me to drain the whole thing again easily.  Good times.  Then winter came and my fortress was encased in ice, breaking the hatches.

Hmm, would it be possible to build a retracting 'tube' to connect the fortress to the outside only when needed?  Perhaps a two bridges forming the top and bottom of the tunnel, but you'd still need walls.

You forgot the option of building a huge tank next to it and filling it with the magma, then letting it all drain back in when you're done!

The Volcano Fort: that was me. Unfortunately it was struck down by the caravan bug. A hint: setting up pumps is a necessity.
