What's all this?

The last time I played Dwarf Fortress was probably about six months ago. Are these wars taking place during world generation? Those goblins must get their asses kicked often, because I'm seeing humans in dark towers. Megabeast rampages?! Is that a road? My lifeless corpse was impaled on a pike? Awesome.

Do wars and rampages yet take place during play, or just world-gen?

It's hard finding good meat shields. The drunks have abandoned their posts in the mead hall.

I've tried training my stats by going fishing. Since I can sneak and swim, I figure I can train two skills at once a practice with my weapon a bit.

If I join a religion and then die, it says that I was a dubious worshipper of that diety. Is it possible to become more pious?

Ummmm. . .lets see.

The wars are worldgen only (right now, at least).  The humans in the dark towers were probably kidnapped by the gobbos.

Meat shields are now mostly former (retired) adventurers and the odd adventurous NPC.  Whether or not they'll follow you depends on their personalities.

I don't think there's a way to become more pious, but I'm not really sure.

Oh yeah, if you want particularly juicy meatshields you can rescue children from goblins.  They don't last so long, though. . .

The towers are completely populated with humans, and the humans have human children as prisoners. If no one else has seen this, I'll download a fresh copy and see if it's my modding the language raws that messed up things.

That's pretty good. I once genned a world to 2008, so no goblins survived, but my human civ sacked the same kobold group ten times throughout history. Roughly one quarter of the city's populous were kobold prisoners armed with high quality iron equipment.
Along the lines of adventurers joining you, you have to be more skilled than they are. I think that's based on the higher combat skill, but I can't be 100% sure.

Actual wars between civs can't occur after worldgen stops, but if a civ sieges you, a new war will be started.
I don't think it actually affects anything beyond starting with the first siege, containing every siege of that civ's on your fort and ending when they stop sieging or your fort dies, but...
My favorite war name so far: Wathathafatha.
It means The War of Battles.  (I think I said The Siege of Battles before, but that's not right)
It was also the unofficial name I coined for the massive downtime while Toady switched hosts a couple weeks ago.
No idea how many it actually caught on with.

As for recruiting retired adventurers: You have to have a combat skill higher than their highest combat skill.
Doesn't matter what; if your combat skill is higher than their combat skill, they'll join you.

As to the "human" Dark Fortresses - babysnatching.  Those are humans who were kidnapped during worldgen and raised as goblins, and then took over the civ when the goblins died off.

I can confirm that the war started in fortress mode sieges continues after your fort dies. There was a new entry in legends for a new war, but no war end announcement.
Sure enough I come into adventure mode, and slaughter the previous invaders for revenge, gaining the title the Blood of Mines. How appropriate.
