My fey mood Mason demands...

    ....rock? Dude's screaming for rock when the entire fortress is practically knee deep (I'm very lazy about dumping rock) in the stuff. I really don't know what to do, seeing as how he has plenty of the stuff to work with, but can't seem to find any. Should I just write him off as insane and wall off the workshop?

Find any type of rock that you have forbidden and unforbid it. It works, most of the time.

I've noticed they'll go for (mostly) anything in your fortress.

       Hrmm.. I've never forbidden any type of rock. While I have Dumped a bit of rock, my dumping ground is a nearby chasm.

Check if there is a ledge a rock might have landed on.
Or maybe he wants ore.

Yes! Hawk is right, plain ore counts as rock to moods.

Make sure that's ALL he's asking for.  If he needs multiple rocks, the demand display might take a while (give it 30 seconds to make sure) to show the other stuff he needs.

Sadly I've been caught out by that in the past. A moody dwarf wanted a variety of items, including two items I didn't actually have at the time but had the resources to make (silk cloth and logs). I'd spotted that the cloth request was longer than usual, so I made two bits of cloth...and was a bit miffed that he wouldn't go get the logs I'd had chopped down while my dwarves were blowing the cobwebs off my loom. Turned out he wanted three bits of cloth :-[
