It's because they don't like you.

Consider yourself lucky; some people have reported goblins bringing caravans to trade with them.

All that aside, try training some war dogs and assigning them to your woodcutters and other dwarfs who need to be outside a lot. They won't take out an army, but if you're lucky they'll distract the goblins long enough for the dwarf to flee to safety behind your impenetrable doors of puddingstone.

regardless, the slime shooter will be completed, come hell or high water, which are both entirely plausible setbacks at this point.

In my game, I got one ambush ever in six years. I envy your situation.

Now how will I ever start my prison camp?  :'(

meh, in one fortress I had I had something like 5 ambushes in a row in the spring/summer of my thrid year, and would see somethng like one ambush a season after that at least. Just about every other fortress I've had since I'll get a couple of ambushes in the late winter of my second/early spring of my third and then not see anything for the next 2-3 years. Beyond that try what Unintelligent said, it may help with the survivability of your dwarves, or you could have some of your military patrol near where any outside dwarves are currently busy

....They just refuse to stay down unless butchered, in which case their skins will haunt you until you subdue and tan them. Never has legendary butcher and legendary tanner seemed so valueable as in this release.

Catch your domestic dwarven terrorists in cage trapped 1x1 cells! Eliminate the threat from within! Sons and Daughters of the Dwarven Revolution, Tell us when a Parent drinks more Dwarven Ale in one sitting than is necessary! Tell us who is busy On Break when the trading needs to get Done!

Dwarven Gulag!

And then if the goblins show up, introduce them to Potemkin drowning chambers!

Your very existence offends them.  Each dwarf that draws breath within your fortress is like the keening of a banshee to you or I.  They will stop at nothing, and will slaughter your dwarves wholesale.  Unless...
your impenetrable doors of puddingstone.

I fully endorse the idea of mountain goats that hunt man.

I wouldn't worry on that count.  Sieging and ambushing goblins are (mostly) automatically generated.  They might run out of interesting leaders, though.
